I see the User Inteface has the ability to "split" a table cell into
multiple cells, however it should also have the ability to merge 2 cells
together

Jeff,
I found the following method:
Press SHIFT on your keyboard, click the first cell with your left mouse
button and the second with your right mouse button (still holding the
SHIFT); In the popup menu select merge cells and there your are. It works
fine for me. There might be other solutions too, but this one is ok.
