Hi.
How do I delete a sorter without deleting the column header?

You can't. Not exactly. Assuming you just want the text of the sorter
without the sort-action, it's easiest to just right-click and delete the
sorter, then retype the text you want in the header. Seems it would be more
consistent to offer "Change to" another form (such as 'Label') like is done
with other things like Textbox, etc.
