After uploading a complete project online, how can I prevent people from
downloading and/or reading the complete database-file?

Usually you would place your database outside the
subdirectory structure where your pages reside.

Depending on your web server you can protect any directory.
For Apache by using .htaccess files (containing logins and
coded passwords for a directory).
