I'd like to create a simple data form using the
Form Tools (not the HTML tools).

The data will not be saved into a database,
but passed onto (through a POST) to the next form.

How can I do this?

I think that in such case this should be done via the HTML tools. It seems that you want to create a pure HTML form and using the Form Tools would be in conflict.
However, if you need certain server actions to be performed (for example validation) then you could use the Form tools indeed. For example the Search Form works in such way and its data is not saved into a database. In fact, the Search form is exactly the Record form but without saving data to the database. Therefore you can select "Add Record Form" in the Form tools and do not specify and Data Source. The "Search Builder" may also be a good option. Although it asks to select a table and fields, in the end the created form doesn't have any Data Source and doesn't save data into a database.
