 Simple for most of you - inserting new columns

I'm still putzing with the TaskManager Example. That's because it's so very close to what I need. I need to add 2 lousy columns and one row. After that it would just editing the column headings.

#1 I need to make the "email field" accept just a name. I cannot even figure out where this validation is being done. How can I make it accept just Fred or Joe?
#2 I need to make that "revised unrestricted" email field show up as a new column in the Task List.
#3 I need to make that "revised unrestricted" email field show up as a new row in the ADD/EDIT Task Form (TaskRecord)
#4 I need to insert another date column into the database and on the TaskList. That would be an Estimated Completion Date column.

If you don't have the time ... perhaps someone could just point me to documents that might cover this.

I've reinstalled the whole program about 6 times now to repair my damage. This is working ...
