 Change the database in one of the examples?

Is any way that you can change the database in the book store example or the master order entry, map the need fields from the new database and generate a new project, the is similar to the examples but with a new database.
In other words the examples will act like a template for a new application.

Yes, absolutely. However you'd need to be somewhat familiar with CCS and go through the forms and fields on each page, and change their data source to point to the new tables and db columns.
